Aga Recipes: Chocolate Chip & Cranberry Cupcakes

At Range Experts we love range cookers and the Aga is one of our favourites, but what we love more than the Aga, is the food that comes out of it! Nobody can deny that the quality of Aga-baked food is ultimately divine.

We are passionate about food, and we must admit that we have a little bit of a sweet tooth, so we’re a little bit excited about this blog that is dedicated to everyone’s party favourite; the cupcake!

Here is one of our favourite cupcake recipes for baking with your Aga:

Chocolate Chip & Cranberry Cupcakes

Ingredients:

Makes 12

  • 115g (4oz) soft margarine or soft butter
  • 115g (4oz) caster sugar
  • 2 free range eggs, beaten
  • 140g (5oz) self raising flour
  • 100g dark chocolate chips
  • 50g cranberries

Method:

  1. Place the cupcake cases in a bun tin.
  2. We like this one because it’s simple; place all over the ingredients together in a mixing bowl (except for the chocolate chips) and beat together with a whisk, or a wooden spoon if you fancy a work-out!
  3. Add the chocolate chips and fold in with a wooden spoon.
  4. Then simply divide the mixture between the cases in the tray.

Where you place the cakes now will depend on the type of Aga that you have; see the instructions for your individual requirements.

Baking:

2 Oven Aga

If you have a 2 oven Aga; place your baking tin onto the oven grid shelf on the floor of the roasting oven. You will need to place a cold plain shelf on the runners above the cakes. These cakes only require a short amount of baking, so leave for around 15 minutes.

3 or 4 Oven Aga

Use the baking oven for this recipe; set the oven grid shelf on the lowest set of runners and place the baking tin here. Bake for 15 minutes or until golden-brown and risen.

Remove from oven and leave to cool on a cooling rack.

Decorating:

When the cakes are completely cool, you can start decorating.

Decoration Ingredients: Chocolate Butter Icing

  • 50g (1¾oz) cocoa powder
  • 100g (3½oz) unsalted butter, softened
  • 200g (7oz) icing
  • 1 tsp vanilla extract
  • 1tsp milk
  • Mini chocolate eggs

Mix all of the decoration ingredients together (except the eggs);, when the mixture is soft and creamy, give it a taste. If it tastes a little too buttery, add more sugar and repeat until you get the desired results. If you’re confident with a piping bag, use one of these and pipe the icing onto the cake. Otherwise just spoon the icing onto it and then pop a mini chocolate egg on top!

The next step; eat and enjoy! We are sure you will, but if you’re not a cranberry fan, use cherries instead or just leave them out. Cupcakes are wonderful; a perfect summer treat and the ultimate party snack.
